Noms of April

It’s been a super busy month, as will the next 2.. but of course, I can’t miss out on my monthly noms. This month, I’ve been exploring a lot more in the kitchen, and I hope to continue to try out fun, new recipes. Hope you enjoy. (: 

Breakfast

 avocado veggie quesadilla | overnight oats w/ oranges, chia seeds, pumpkin seeds
 
 berry oatmeal w/ flax seeds, hemp hearts, cashews | apple cinnamon oatmeal w/ kiwi, mandarin oranges, raw almonds
 
 cinnamon steel cut oats w/ pears, raspberries, pumpkin seeds, hemp hearts, lemon almond cream | mango coconut brown rice pudding w/ shredded coconut
 
 avocado oatmeal w/ cherry tomatoes | banana french toast w/ sliced bananas, pumpkin seeds, honey almond sauce (recipe by Minimalist Baker)
 
 oatmeal w/ apples, pumpkin seeds, peanut butter sauce | strawberry avocado toasts
 
 cinnamon chia pudding w/ strawberries, kiwis, cashews, hemp hearts, lemon almond cream | vegan apple cinnamon pancakes w/ coconut oil sauteed apples, pumpkin seeds, sliced almonds
 
coconut milk steel cut oats w/ berry chia jam, strawerries, raspberries, pumpkin seeds, coconut chips | toast w/ goat cheese + cucumbers, apples

Lunch

 fried quinoa w/ scallop, purple cabbage, carrots, mushrooms, mixed greens | black bean spaghetti in veggie soup {onions, carrots, bell peppers, oyster mushrooms, cherry tomatoes, scallions}, w/ poached egg
 
 smoked salmon veggie wraps w/ baby spinach, red bell peppers, purple cabbage, lemon pepper bean puree | salmon quinoa cakes w/ citrus yogurt sauce, steamed veggies {broccoli, cauliflower, carrots, yellow carrots}
 
 rotini w/ baked chicken breast, light mozzarella, steamed veggies {green beans, peas, carrots, corn}, sauteed kale | peanut butter banana sandwich
 
tuna salad sandwich w/ baby spinach | quinoa lentil salad {quinoa, green lentils, corn, cucumbers, cherry tomatoes, baby spinach} w/ raspberry dressing
 
rosemary roasted veggies {sweet potatoes, red bell peppers, mushrooms, cucumbers, cherry tomatoes}, sunny side up, spring greens | thyme quinoa egg bake w/ light mozzarella, lemon roasted broccoli + bell peppers

veggie pasta bake {whole wheat bowtie pasta, light mozzarella, greek yogurt cream sauce} | brown rice // braised shiitake + enoki mushrooms // stir-fry pork kidney, zucchini

Again, I apologize for my inactivity.. it will probably continue until the last of my exams in June, but I promise I will start posting more regularly once summer comes.
